Ingredients:
-4 chicken breasts -1 cup ricotta cheese -1/2 teaspoon salt -1/4 teaspoon black pepper -1/4 teaspoon dried oregano -1/4 teaspoon dried basil -1/4 teaspoon garlic powder -1/4 cup shredded Parmesan cheese -2 tablespoons olive oil -1 (14.5 ounce) can diced tomatoes, undrained Instructions: 1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. 2. In a bowl, combine ricotta cheese, salt, pepper, oregano, basil, garlic powder and Parmesan cheese. 3. Butterfly chicken breasts by cutting them horizontally almost in half, but not quite through the meat. Open up like a book and pound lightly with a mallet or heavy skillet until flattened. 4. Stuff each chicken breast with about 1/4 cup of the cheese mixture. Secure closed with toothpicks if necessary. 5. In a small bowl, mix together olive oil and diced tomatoes. Pour over chicken breasts in the baking dish. 6. Bake in preheated oven for 30 minutes or until chicken is cooked through and juices run clear.

- 2 tablespoons butter, divided
- 1/2 cup Italian-seasoned bread crumbs
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Instructions:
- Preheat oven to 350 degrees F.
- In a small bowl, combine mozzarella cheese, Parmesan cheese, and basil.
- Place chicken on a piece of wax paper and spread the cheese mixture evenly over top.
- Roll chicken up tightly and secure with toothpicks.

- Dip chicken in butter, then coat with bread crumb mixture.
